Homemade Tortillas
These tortillas will transform your burritos into something really special! Guaranteed you will already have all the ingredients in your cupboard and it only takes 30 minutes to whip them up.
SERVES: 8
INGREDIENTS:
- 2 cups plain flour
- 1/4 teaspoon salt
- 3/4 cup cold water
- 45ml Extra Virgin Olive Oil (EVOO)
METHOD
1. Sift the flour and salt into a large mixing bowl and make a well in the centre.
2. Pour the water and EVOO into the well and gradually mix the wet ingredients with the dry ingredients using a wooden spoon.
3. Once the mixture has roughly come together, tip it out onto a clean workbench and kneed for about 10 minutes, or until you have a smooth, elastic dough (if you have a stand mixer, attach the dough hook and let it go on a medium to low speed for about 10 minutes).
4. Cover the dough with a clean tea towel and let it rest for 10 minutes.
5. Cut the dough into 8 equal pieces.
6. Heat a fry pan pan over medium heat (a cast iron or heavy bottomed stainless steel pan is best).
7. Roll your first piece of dough into a very thin tortilla and dust with flour. Cook it on the pan for 30 seconds per side, or until it bubbles and becomes nicely browned. Roll your next tortilla while the previous one is cooking.
